Does about 420 on a hollow in NG+. The weapons, armor, and stats you need to backstab or parry a black knight are literally anything. I recommend backstabs though, parrying those assholes is a shortcut to ouch time. You can use your fists to parry and repost Gwyn. You can do that + backstab black knights.
Here is how I found how to do it (gargoyle Halberd) 1) dont have your shield raised. 2) behind them. 3)pressed right up against them. The area outside the first bonfire in the Undead Burg is a good place because of all the hollows right outside. Try parrying during each of their attacks until you can consistently do it. If you get hit, it won't do that much damage. Once you get it down with the short sword guys, move to the spears, then the axes, then the long sword guys.

You mention it in your post, so I'm going to go ahead and say that it's probably the problem you're experiencing. My suggestion would be to either not bother with a backstab at all (silver knights are fairly easy to parry), or to just block until you stagger them and can get behind. Circle strafing the silver is more frustrating than helpful.
